Tetelas con Queso
Ingredients
1 ½ cup masa harina
1 ½ cup water
Pinch salt
Refried beans
About ½ cup queso quesadilla
Avocado oil
Directions
Warm the water. In a large bowl, combine the masa harina with the water and salt.
Knead well, adding a little more water if it feels too dry. Cover and let rest for about 10 minutes.
Divide the dough into three equal-sized balls.
Press or roll out each ball until thin. In the middle, add about 1 tablespoon of refried beans and a small pile of the queso quesadilla.
Fold over one side of the tortilla, then the second side, and finally flip over the third remaining side to close the tetela. It will look like a triangle. Repeat this process with the rest of the dough to make 3 tetelas. You can do this on cling wrap to make it easier.
To a frying pan, add about a tablespoon of the avocado oil and bring to medium heat. Add the tetela to the pan and cook until hot and golden brown, about 2-3 minutes per side.
Add to a plate and serve with guacamole and sour cream. Garnish with cilantro.
