Queso Cotija Cucumber Salad

Ingredients

  • ¼ cup Pickled Red Onions

  • 1 serrano chile, finely chopped

  • ¾ cup finely chopped fresh cilantro

  • 1½ pounds Persian cucumbers, cut into 1-inch slices

  • 10 ounces La Morenita’s Queso Cotija, crumbled

  • Juice of 3 key limes (about 2 tablespoons)

  • ½ teaspoon sea salt

Directions

  1. In a large bowl, toss the pickled onions with the chile and the cilantro

  2. Add the cucumbers and La Morenita’s Queso Cotija

  3. Toss and season with the key lime juice and sea salt

  4. Let it rest in the refrigerator and serve it cold
