Honduran Enchiladas
Ingredients
For the meat:
½ pound of ground sirloin
1 tbs of olive oil
1 garlic clove, minced
For the toppings:
½ onion, diced
½ tomato, diced
½ green pepper, diced
1 cup of shredded cabbage and 1 tbs of vinegar
1 hard-boiled egg sliced
1 8 oz. can of tomato sauce (¾ for the meat and ¼ to drizzle over enchiladas)
1 cup La Morenita Queso Cotija
Directions
Brown the meat
Place tostadas on a plate
Top with onion, tomato, and pepper mix
Top with cabbage
Place 1 slice of sliced hard-boiled egg
Drizzle tomato sauce
Generous sprinkling of La Morenita Queso Cotija
