Honduran Enchiladas

Ingredients

For the meat:

  • ½ pound of ground sirloin

  • 1 tbs of olive oil

  • 1 garlic clove, minced

  • For the toppings:

  • ½ onion, diced

  • ½ tomato, diced

  • ½ green pepper, diced

  • 1 cup of shredded cabbage and 1 tbs of vinegar

  • 1 hard-boiled egg sliced

  • 1 8 oz. can of tomato sauce (¾ for the meat and ¼ to drizzle over enchiladas)

  • 1 cup La Morenita Queso Cotija

Directions

  1. Brown the meat

  2. Place tostadas on a plate

  3. Top with onion, tomato, and pepper mix

  4. Top with cabbage

  5. Place 1 slice of sliced hard-boiled egg

  6. Drizzle tomato sauce

  7. Generous sprinkling of La Morenita Queso Cotija
