Gaspacho Moreliano
Ingredients
1 large mango, peeled and finely chopped
¼ pineapple, peeled and finely chopped
½ jicama, peeled and finely chopped
2 limes
½ orange
Teaspoon of salt
La Morenita Queso Cotija
Tajin
Chamoy
Lime wedges, for garnish
Clear plastic cups
Directions
In a large bowl, combine the mango, pineapple, and jicama.
Add the juice of the two limes and the orange, plus the salt. Stir well to combine.
In a clear plastic cup, add a generous heap of the fruit. Toss with a layer of cotija (about 2 tablespoons), a sprinkle of Tajin, and a drizzle of chamoy.
Repeat until the cup is overflowing, ending with the queso cotija (about 2 tablespoons) and the chamoy. Garnish with a lime wedge and enjoy.
