Gaspacho Moreliano

Ingredients

  • 1 large mango, peeled and finely chopped

  • ¼ pineapple, peeled and finely chopped

  • ½ jicama, peeled and finely chopped

  • 2 limes

  • ½ orange

  • Teaspoon of salt

  • La Morenita Queso Cotija

  • Tajin

  • Chamoy

  • Lime wedges, for garnish

  • Clear plastic cups

Directions

  1. In a large bowl, combine the mango, pineapple, and jicama.

  2. Add the juice of the two limes and the orange, plus the salt. Stir well to combine.

  3. In a clear plastic cup, add a generous heap of the fruit. Toss with a layer of cotija (about 2 tablespoons), a sprinkle of Tajin, and a drizzle of chamoy.

  4. Repeat until the cup is overflowing, ending with the queso cotija (about 2 tablespoons) and the chamoy. Garnish with a lime wedge and enjoy.
